Dave might I add a suggestion when you have the meat cut up mix a tablespoon of corn flour/starch and a table spoon of soy garlic and ginger with it and let it sit at room temp till your ready to fry up it'll thicken the sauce faster and add a bit of flavor. Me being a chilihead I'd add some chili sauce to the sauce but either way looks nice.

When my mum makes stir fry here in Singapore, she usually coats the raw meat with flour, typically corn flour as this will soften the beef and also at the same time thicken the sauce. But the one that the onepotchef makes is also really yummy looking!

@emmajphotography Neither – the meat releases a bit of juice as it cooks, simply cook the meat, remove it and discard the liquid (or add it to the sauce if you like)

Whenever I try to make beef stir fry the beef always gives out a lot of moisture to the point where it almost ends up stewing, then it becomes really tough & chewy.. Is my butcher a wanker or am I doing it wrong? lol

@giselathegee Sure – you can use any vegetables you prefer. I recommend cutting the carrot into thin "matchsticks" for best results πŸ˜‰

i love that you used actual chinese ingredients (hoisin and oyster sauce) its kinda annoying when people make "chinese" food and just dump a whole bunch of soy sauce into it! Thanks!
