Embutido is a type of Filipino meatloaf. It is cylindrical in shape and is cooked through steaming. The common embutido ingredients are ground pork, egg, raisins, and bread crumbs. This embutido recipe is special because this is my mom’s recipe and she is using tomato sauce to make it more flavorful.

Embutido can be consumed right after being steamed. However, some people like it cold, so they chill it in the fridge for a few hours before serving. Emutido is also good when fried. Steamed embutido is sliced crosswise and fried until light brown. It is best eaten with rice and banana ketchup.

Special embutido such as this recipe also includes hard boiled eggs and hotdogs. It is served on very special events and occasions.

Filipino embutido should not be confused with Spanish embutido. The later refers to dry sausage in general.

Embutido is also sold commercially. You can find these in meat shops and in your neighborhood stores that sell tocino, longganisa, and tapa.
