After my sausage rolls came out of the oven, the bottom of the puff pastry was very moist / soaked  because of the grease  that came out of the minced meat. What can I do about this?

Dry Breadcrumbs (store bought) are best used for crumbing meat. Fresh bread crumbs are better for bonding ingredients together (like in this recipe) ;)

David, why do we have to use fresh bread crumbs? What's wrong with store bought?
