1 small tortilla
100g egg whites
50g deli meat
1 big tomato
1 clove garlic
10g soy sauce
Chop up onion and jalapeno. Grate the tomato with a box grater, alternatively, you can use crushed tomatoes. Add oil to the pan on medium heat and add in jalapeno and onion. Fry them for 3-4 minutes. Add another bit of oil and crush 1 clove of garlic. Keep frying for 15 seconds and now add in the grated tomato. Add in black pepper and soy sauce. Stir everything and let it simmer for 3-5 minutes until thick.
Meanwhile, cut deli meat into small cubes. Prepare all other ingredients. Add tortilla to a dry pan and cook both sides for 45 seconds until slightly browned. Remove the tortilla and lay it on a plate. Now add in oil and deli meat and fry for 1 minute on medium-high heat. Add in egg whites and immediately start stirring. Egg whites will be cooked in 20 seconds. Remove egg whites and deli and add them on top of the tortilla. Now crack 1 egg into the pan and cook until done. Lay it on top of the egg whites and tortilla. Take the sauce and add it on top of everything with a bunch of fresh cilantro. Done!
