Chicken breast 180g
Bell peppers 150g
Chicken stock 100g
Laughing cow 1
Evaporated milk 3% 50g
Cajun seasoning 2tsp or
1/2 tsp paprika
1/4 tsp each cayenne, garlic, onion, thyme, oregano
salt and pepper
Combine seasoning in a glass and mix. Cut chicken breast into small strips, put them on a plate, and add 2g of oil and half of the seasoning. Mix until chicken is coated.
Chop up vegetables and prepare laughing cow, evaporated milk, and chicken stock.
Fry chicken breast on medium-high heat in a pan for 1 minute each side. As soon as both sides have color, remove the chicken from the pan. Add oil to the pan and add in vegetables. Fry the vegetables for 4 minutes, stirring occasionally. Add the other half of the seasoning and toast them for 20 seconds.
Now add stock and evaporated milk and let it simmer for 1 minute. Add in the laughing cow and incorporate it by pressing it down and stirring. Add back the chicken and keep cooking for another minute. Serve it with 60g of rice or pasta and top with fresh parsley. Done!
