3 eggs
1 onion
100g zucchini
100g cabbage
100g asparagus
1 clove of garlic
50g frozen peas
25g feta cheese
4g stock powder
50g water
1g cumin
bunch parsley
salt, pepper
Start by chopping up all vegetables. Peel and grate the garlic and combine the stock powder with water and mix.
Now start frying the zucchini in a bit of oil on medium heat, for 1-2 minutes. Add cabbage, onion, and asparagus with another bit of oil and keep frying for 3 minutes under occasional stirring.
Add in grated garlic, cumin, peas, cumin, and black pepper. Give everything a stir. Add in stock and then crack in 3 eggs. Close immediately the lid and let it simmer on medium-low heat for 3 minutes until the eggs are cooked.
Top the eggs with crumbled feta cheese and chopped parsley, done!
