INGREDIENTS IN THIS DISH:
1kg of Tomatoes (chopped)
500g of Potatoes (peeled and chopped)
1 Brown Onion (chopped)
2 Cloves of Garlic (chopped)
3 Cups of Vegetable Stock (750ml)
2 Tablespoons of Tomato Paste
Olive Oil
Pepper
Handful of Fresh Basil Leaves.
Preparation Time: About 10 minutes
Cooking Time: About 25 minutes
SERVES 4 – 6
ALL MEASUREMENTS GIVEN ARE AUSTRALIAN STANDARD METRIC

If I may... I'd be inclined to add the goat cheese as a garnish to the top of your bowl of soup. A lot of mild cheese would disappear into a soup like that before you'd ever really taste it. OR add a whole pound! LOL! Nothing wrong with that either!
Made this for my wife. She loved it. I mixed it up a little and fried off some bacon to start, removed, then sweated the onions & garlic in the same pot, added chili, Italian herbs & paprika. Put everything in except a 1/4 of the bacon which we used for garnish! Devine!!!!!! Thanks OPC!!

Need a grilled cheese sandwich to go with that......but it can wait, due to the fact that it's summertime here in the northern hemisphere, with temp's in the 90+ (F) 30's c? Either way u look at it...it's rather warm here

You don't need to blend the soup, only if you prefer it smooth ;)
