Spinach and Feta Mini Frittatas are a quick, simple and delicious treat that’s perfect for serving for a weekend breakfast or brunch with friends. Spinach and Sun-dried Tomatoes are combined with feta cheese and eggs, then baked until golden. There’s virtually no prep work and the results are senational – Try it today 🙂
Ingredients:
250g Box of Frozen Chopped Spinach (thawed)
100g of Sun-dried Tomatoes (chopped)
1 Teaspoon of Minced Garlic
300g of Feta Cheese (crumbled)
1/4 Cup of Self Raising Flour
10 Eggs
Olive Oil
Salt and Pepper
Preparation Time: About 10 minutes
Cooking Time: About 20 minutes
