My Pulled Chicken Mini Tacos are quick to make, bursting with flavour and perfect for serving as party food, as part of a snack platter or for good old fashioned Taco Tuesday! Tender Pulled Chicken, cooked in tomato, honey and smoked paprika is served on soft or hard taco shells with your choice of toppings. So delicious, you’ll want to make these all the time – Try it today 🙂
Ingredients:
1kg of Chicken Thigh Fillets
1 Tablespoon of Tomato Paste
2 Tablespoons of Honey
1 Tablespoons of Smoked Paprika
1 Clove of Garlic (finely chopped or minced)
Salt
1 1/2 Cups of Water
Taco Shells (I used soft and hard “stand and stuff” mini taco shells)
Toppings of your choice (I used guacamole, sour cream, tomato and coriander)
Preparation Time: About 10 minutes
Cooking Time: About 50 minutes
