Oven Roasted Citrus Chicken is a wonderful, quick to prepare dish – perfect for Sunday lunch with friends and family. Chicken pieces are smothered in a delicious citrus and herb marinade, then oven roasted with slices of lemon, orange and red onion. What you get is moist, succulent chicken that can be served with your favourite vegetables or salads, with plenty of leftovers – Try it today 🙂
Ingredients:
12 Chicken Drumsticks (or you can use thighs, wings etc)
1/4 Cup of Olive Oil
Juice of 1 Large Lemon
Juice of 1 Orange
1 Tablespoon of Mixed Dried Italian Herbs
1/4 Teaspoon of Dried Chilli Flakes
1/2 Teaspoon of Smoked Paprika
2-3 Cloves of Garlic (minced – about 3 to 4 teaspoons)
1 Large Lemon (sliced)
1 Orange (sliced)
2 Small Red Onions (peeled and quartered)
Salt and Pepper
Preparation Time: About 10 minutes
Cooking Time: About 1 hours
