  • Just made these muffins today!! Delicious! I had used lowfat yogurt so I did add a bit of milk since the batter was too thick. XDD came out so moist!

  • Made these this evening. Can't wait to try at breakfast. Had a little issue with consistency but figured cause it was humid in my house it's why the batter was thick... added more yogurt and thinned right out enough to finish mixing. Other than that recipe was easy to follow as always

    Prep time: 10 mins
    Cook time: 20 mins

    Ingredients:
    ½ cup of Unsalted Butter, softened at room temperature
    ¾ cup of Plain Yogurt
    ½ cup of Granulated Sugar
    2 Tsp of Baking Powder
    ½ tsp of Baking Soda
    ½ tsp of Salt
    2 cups of All Purpose Flour
    3 Tbsp of Poppy Seeds
    1 Envelope of Vanillina or 1 tsp of Vanilla Extract
    2 Eggs
    Zest of 1 Large Lemon or 2 small lemons
    Juice of One Lemon

    For the Glaze
    1 cup of Powdered Sugar
    About 1 Tbsp of Lemon Juice

  • Hi Laura, if i substitute the butter with oil, how can i cream the oil and sugar together at the first step?
