500g Lamb Mince
1 Carrot (grated)
3 Brown Onions (sliced thinly)
2 Tablespoons of Freshly Chopped Rosemary (plus extra to garnish)
Olive Oil
3/4 Cup of Chicken Stock
1/2 Cup of Water
400g Can of Diced Tomatoes
100g of Ricotta Cheese
500g Penne Pasta
Salt and Pepper

Hi David, this looks delicious! I have a question, would using another type of cheese work for this recipe? I don't find ricotta particularly appealing... But I was thinking substituting cream cheese or sour cream?
