@dwwism1 English bacon is thick like Canadian bacon. So if you're in the US, you need thick bacon rather than the regular thin US stuff. Thin bacon would go too crispy.

You could certainly cook the bacon separately or even grill the bacon. This would reduce the overall fat content of the dish. However, I do believe that by cooking the bacon all together in the same pan does offer a better overall flavour.
Either way I am sure the dish would taste good!
Maybe lean bacon could be a good compromise

The bacon I used was regular smoked bacon. But you can use thick or thin bacon, smoked or unsmoked. Use your favourite bacon.
