This is such a delicious and refreshing smoothie that does taste like a pina colada. It’s made with fresh coconut meat, coconut milk, coconut water, fresh or frozen pineapple, a banana, a splash of orange juice, and a dash of vanilla extract.
I believe using the fresh coconut from a baby Thai coconut makes a difference in the taste. I even have a video on how to easily cut into one and take out the soft meat. Check it out here: http://youtu.be/WhDBm0ikyhI

This smoothie is a great way to incorporate more fruits into your diet, especially coconut and the taste is amazing.

Sounds delish. But i do not keep coconut meat. Any suggestion for a substitute?
Thanks. Why don't you keep coconut meat? There is really no substitute that I can think of. You could leave it out. You will have less coconut flavor without it. Thanks for stopping by and commenting.
