My hubby and myself LOVE calamari!!! OMG Larry, you are the best! Thanks for this recipe. There is a Greek recipe called Kalamarakia Tiganita, which my grandmother made at least once a week. It almost mirrors your recipe, except she added paprika and freshly squeezed lemon and oregano to the flour mixture. It is to die for with a glass of Pinot Grigio.

where did you get the calamari? whole or already cut into rings? was it cold when you breaded it?
Hey Larry, looks good, I love me some squid rings. Regarding cook time, apparently there are two windows of tenderness, one with a short cook like you did, and one where they eventually get tender again after being cooked for a much longer period.
I've never had the guts to try cooking them for the longer time, I can too easily imagine saying "Dang, they never got tender again" while chewing on a mouthful of rubber bands. :)
Squid, either cook it for 1-2 mins or 2 hours +, anything in between and its fucked :)
