Vegetable Soup is a fantastic winter warmer. It’s easy to prepare, quick to cook and cheap to make!!!

RECIPE FACT SHEET

INGREDIENTS IN THIS DISH:

2 Potatoes
2 Carrots
1 Parsnip
1 Swede (Small Turnip)
1 Celery Stalk
1 Small Onion
2 Litres (8 cups) of Stock
1 Tin of Diced Tomatoes
Olive Oil (Garlic Infused is best)

SERVES APPROX. 8 – 10

Preperation Time: 10 minutes
Cooking Time: 30 – 40 minutes

ALL MEASUREMENTS GIVEN ARE AUSTRALIAN STANDARD METRIC

  • We like to add a little bit of sour cream to the soup. Once you got the soup going. take half a cup of the soup, and add a few tablespoons of sour cream and mix, then back in to the soup and stir.

    Makes it creamy

  • i see that you are using chicken stock powder. is there any different if you make your own stock instead of using powder?
    

  • could this be done in a slow cooker ? If so what would you do differently, I am guessing the pulses would not need soaking overnight.
    

  • Yes, you can do this in a slow cooker, and you can skip the soaking step. I recommend adding a little bit more liquid, as the pulses will soak some up while cooking ;)
