INGREDIENTS IN THIS DISH:

Olive Oil
2 Cloves of Crushed Garlic
1 Small Eggplant (Aubergine – chopped)
2 Small Red Capsicums (Bell Peppers – deseeded and sliced)
2 Zucchini (Courgette – sliced)
3 Tomatoes (chopped)
1 Tablespoon of Red Wine Vinegar
1/4 Cup of Water
Salt and Pepper
Fresh Parsley (to garnish)

Preparation Time: About 10 minutes
Cooking Time: About 15 minutes

SERVES 4 – 6

ALL MEASUREMENTS GIVEN ARE AUSTRALIAN STANDARD METRIC

  • Looks delish! Definitely making as a side dish soon. I make something like this - it's a family favorite! Though mine is done in the oven and has sliced sausage. 2 smoked sausage, 3 Bell peppers, 1 Yellow Squash (or eggplant), 1 zucchini, 2 onions, mushrooms, 1 large can of diced tomatoes, 1 reg size can of crushed tomatoes, garlic, and s&p. Slice and dice, put it all in a 9x13 pan, cook at 350* for 1.5-2 hours. I usually mix in 4 cups of rice. Great for 2 dinners and lunch! =)

  • I would recommend making this as required. This recipe is not suitable for freezing, but can be reheated after cooking ;)

  • Great vid id make this what could you serve this with? Btw when you say potters sounds like your talking to harry potter mans lol
