Creamy Red Lentil Curry (Vegan / Dairy Free / Gluten Free) | One Pot Chef



Creamy Red Lentil Curry is a Vegan friendly, Dairy Free and Gluten Free main dish, perfect for Meat Free Monday. Onion and garlic are combined with red lentils and a variety of spices along with tomato and coconut milk. Simmered gently, this creamy curry is great served over rice, with mixed vegetables or just by itself – Try it today 🙂

Ingredients:

1 Teaspoon of Vegetable Oil
1 Brown Onion (peeled and diced)
4 Cloves of Garlic (minced, about 4 teaspoons)
1 Teaspoon of Mild Mustard (I used Dijon)
1 Teaspoon of Turmeric
1/2 Teaspoon of Ground Coriander
1 Teaspoon of Cumin
1 Teaspoon of Mild Curry Powder
Salt
2/3 Cup of Tomato Paste
400ml Can of Coconut Cream
1 Cup of Dry Uncooked Lentils (rinsed)
Mint (to garnish, optional)
3 Cups of Boiling Water

NOTE: When cooking for people with Gluten Intolerance, ALWAYS check the packaging of ALL ingredients to confirm they are Gluten Free before you start cooking.

Preparation Time: About 10 minutes
Cooking Time: About 55 minutes

  • No need for "Whoops" @2:00... 400g of (coconut) milk is the same as 400ml of (coconut) milk. That's the beauty of the metric system. : )

  • i did research on lentils, there is a youtuber who passed away who had a channel and was doing "depression era cooking" yes she was a wonderful old lady. one meal she made was lentils with rice. that spurred me to look into it. and it turned out that if you eat rice with lentils you get complete protein chains...so GOOD MEATLESS MEAL w/ plenty of protein. and tasty like mad!
