Dont have brown sugar so i will use all regular and i think i may try coconut extract since i have some and see how it turns out
I like coconut Laura. Can you do cookies with almond and we use to make cookies with coconut and condensed milk . I like to see your version of them. Here in Malta it's like a tradition to do them in wedding parties but no one give you the recipe cause we are a small island
I did these cookies , delicious Laura and yesterday I tried the almond biscotti . Yummy . I did half of the batch cause more I have more I eat. I am proud that I did them and they are my husband s favorite. Usually I buy them but not any more. Thanks Laura

These were heaven right out of the oven! They don't taste quite the same once they've cooled off! Have your crew ready with glasses of milk when they come out of the oven!
Looks like you used freshly grated coconut with lots of moisture content. I have used dried coconut. I realised while baking that they have lot lesser heat resistance, which resulted in partly burnt coconut.
Is it possible to prevent that by increasing moisture content of the dough, or by soaking the grated coconut in cream for 10 minutes before mixing ?

I made them too. Not exactly like Laura but it is fine without chocolate

Laura can I use cake flour or self raising flour? its so hard to find all purpose flour in South Africa
