Chicken with Cashew Nuts is a delicious stir fry, inspired by my local Chinese restaurant. Tender slices of chicken breast are stir fried with vegetables, hokkien noodles and a scrumptious sauce. Quick enough for weeknight dinners and impressive enough to serve to friends, this dish will keep everyone happy – give it a go!

RECIPE FACT SHEET

INGREDIENTS IN THIS DISH:
500g Chicken Breast Fillets (thinly sliced)
1 Brown Onion (thinly sliced)
1 Large Carrot (thinly sliced)
2 Cloves of Garlic (crushed)
500g of Broccoli (trimmed and cut into florets)
100g of Baby Corn (cut diagonally)
Vegetable Oil (for stir frying)
450g Pack of Hokkien Noodles (or whatever noodles you prefer)
1/2 Cup of Roasted Unsalted Cashew Nuts
Sauce:
2 Tablespoons of Sweet Chilli Sauce
2 Tablespoons of Oyster Sauce
2 Tablespoons of Water
NOTE: If serving this with rice instead of noodles, double the sauce ingredients and do not add rice to the wok. Simply serve stir fry over the rice in serving bowls 😉
Preparation Time: About 10 minutes
Cooking Time: About 10 minutes
SERVES 4 – 6

Yum David....Can you please do Sweet n Sour Chicken..Chinese takeaway style?
I just love your show. You convey to the viewer very basic, easy steps to make great food in a relatively short time. Once I graduate from college this May (I spend all of my time in the library or in a book at home), I plan to get my ass in the kitchen and try out a number of your recipes. :)

You can use soy sauce instead. It won't be exactly the same - but there isn't much that is close to Oyster Sauce ;)

What kind of noodles? I rewind a few times and still didn't get what it is.. Looks amazing
