Good to hear from you, I guess that when you have made your, you used a whole breast and made a slit in the middle of the breast to fill with cheese.
Your version with the blue cheese sounds very nice with butter fried chanterelles and creminis :)

Giving the fillets a poudning like that and then rolling them up, really did the trick. I've made this dish before, but never as rolls. Much obliged for this great vid!
I used a blue cheese as I feel it's a real good match with the chicken and bacon. Served with butter fried chanterelles and creminis (aka italian brown) and rice.
