Beth’s Strawberry Basil Panna Cotta Recipe

STRAWBERRY BASIL PANNA COTTA
Makes 4

INGREDIENTS:
¾ cup (180ml) milk
¾ cup (180ml) heavy cream
3 tbsp (38g) sugar
1 ½ tsp (7.5ml) unflavored powdered gelatin
1 ½ cup (225g) strawberries, chopped
1 tbsp (13g) sugar
3 tbsp (45ml) water

Garnish:
½ cup (75g) fresh strawberries, diced
2 tbsp (30ml) fresh basil, julienned

METHOD:
Add strawberries, sugar and water to a blender. Blend until pureed. Set aside.

Place milk, cream and sugar in a saucepan. Simmer until sugar dissolves. Remove from heat, allow to cool slightly. Add gelatin. Whisk to dissolve. Add strawberry puree. Whisk to combine.

Strain mixture through a fine mesh sieve, into a 4-cup Pyrex pitcher.

Pour mixture into 6 oz. glasses. Refrigerate at least 4 hours to chill and set.

Before serving, toss diced strawberries with basil. Top each panna cotta with 2 tbsp of the strawberry basil mixture and serve.

  • Yummy. I am going to make these but keto style by using all cream and monk fruit sugar. I can't have sugar or milk but I can have cream.
