BETH’S WARM CINNAMON DONUTS WITH COFFEE ICE CREAM
Makes 20 donut holes

TOPPING:
½ cup (100 g) sugar
1 tsp (5 ml) of ground cinnamon

DOUGH:
1 ¼ cup (150g) flour
1 tsp (5 ml) baking powder
1/2 tsp (2.5 ml) salt
1/3 cup (65 g) sugar
2/3 cup (160 ml) milk
1 egg
½ tsp (2.5 ml) vanilla
½ gallon (2 L) of 100% pure peanut oil (not toasted peanut oil)

*NOTE: Peanut oil has a high smoke point which means it can reach high temperatures before it begins to smoke. This makes it ideal for frying food. I also find it is a lighter oil and food fried it in isn’t as greasy as some other oils.

METHOD:
Heat oil in a large heavy bottom pot, heat oil until a candy thermometer reaches 375F degrees (about 15 mins).

As your oil heats, prepare your dough. Whisk together flour, baking powder, sugar and salt. Set aside.

In separate bowl whisk together egg, milk and vanilla. Pour this mixture into the dry mixture and whisk until combined. You will have a sticky dough-like consistency. Allow to rest for 5 mins to allow baking powder time to activate.

Meanwhile, make the topping. Simply combine the cinnamon and sugar and mix together with a fork. Set aside.

Then place 2-3 sheets of paper towel on a large dinner plate. This will be used to drain the oil off your finished donuts.

Then, once your oil is ready (you will know it is ready if you drop a small piece of dough in it and is sizzles and rises to the top) scoop out some dough using a 1 ¼ inch mini ice cream scoop (or spoons work too).

Fry 4-5 donuts at a time. Once the rise to the surface, keep an eye on them, turning them to allow for them to brown on all sides. Don’t rush this step, you want a nice golden brown color on the donuts and to make sure they are fully cooked through as well. If the donuts browns too quickly and isn’t cooked through, reduce the heat slightly.

Once done, transfer donuts with a slotted spot to your towel lined plate. And then roll the warm donuts in the cinnamon sugar.

NOTE: if you are making these for a party, wait a few minuets for the oil to get back to temperature (this is where a candy thermometer will come in handy) and fry another batch 4-5 at a time until all the dough has been used.

Then once the donuts are drained place them on a cookie sheet and top loosely with a sheet of foil.

Moments before serving place donuts in a preheated 350F oven and warm for 5 mins. Then roll in the cinnamon sugar and serve immediately with a scoop of your favorite coffee ice cream. Enjoy!
