BANANAS FOSTER RECIPE
Serves 4

Ingredients:
1 stick of salted butter (120 g)
1 cup of brown sugar (180 g)
½ tsp cinnamon (2.5 g)
2 tbsp heavy cream (30 ml)
1 tsp (5 ml) of rum extract

2 semi-firm bananas, cut diagonally into 1 inch chunks
¼ cup (40 g) of chopped walnuts
4 scoops of vanilla ice cream

METHOD:
Melt butter in a large sauté pan. Add brown sugar and cinnamon. Allow to simmer and bubble, stirring occasionally. Add heavy cream and stir to combine. Add bananas and cook until soft and coated with caramel.

Turn off flame and add Rum Extract. (There is alcohol in the extract and you don’t want the heat source to ignite the alcohol vapors and flame)

Place 1 scoop of vanilla ice cream in each bow (or heat safe glass)l, top with bananas and sauce, and top with walnuts.

  • sure I would actually just heat the cane sugar in a dry skillet first, to let it melt and begin to turn brown and caramelize (will take a few mins), then add the butter and proceed with the rest of the recipe :) Enjoy!
