Beef and Bourbon Stew (Slow Cooked Casserole) is the perfect thing to warm you up and fill you up during the winter months, but can be enjoyed anytime of year! Serve with Rice or Potatoes.

This recipe is for a Crock Pot / Slow Cooker.

INGREDIENTS IN THIS DISH:

1kg Casserole Beef (Cubed)
3 Carrots
1 Onion
1 Cup of Sliced Mushrooms
1 Tin of Diced Tomatoes
1 Tin of Tomato Soup
1/4 Cup of Bourbon
Salt and Pepper
Italian Herb Mix
Minced Garlic
1 Litre of Beef Stock
Plain Flour

Preparation Time: 10 – 15 minutes
Cooking Time: 3-4 Hours (on Low) or 2-3 Hours (on High)

ALL MEASUREMENTS GIVEN ARE AUSTRALIAN STANDARD METRIC

  • Hi David: What do you think of this idea? For people that are on a "tight work schedule" but also want to use slow cooker recipes but aren't available to turn on the slow cooker at the appropriate time for dinner to be ready after work. How about using a programable household lighting timer to control the on/off switch for a slow cooker for when people are away from home? I'm not an electrician but this may be a helpful suggestion for your next topic on the "One Pot Chef."

  • @MegaTmarshall You can add the potatoes to the slow cooker if you wish, I just suggested doing them separately in case people want mashed potato etc

  • Why not add some chunks of potatoes to the slow cooker and complete the recipe all in one move? It looks delicious to me but why have an extra pot just to boil some potatoes in to add to the same stew, Mr. One Pot Chef ??? Wouldn't the potatoes taste even better if they were slow cooked in the delicious stew with all the sauce and gravy? I'm not being critical...just wondering. Greetings from Canada!

  • I love my slow cooker mate i use Aberdeen Angus beef and put it on low over night its cooked over 16 hours and saves doing any effort for dinner the day you eat it. Never would of thought of puttting ing tomato soup i'll try that thanks.
