You can use imitation rum flavor and get the same effect as adding rum and letting the alcohol burn off.
It adds more flavor. Yes it has a rum-my after taste, but it doesn't sting like it would if it was full alcohols. Its purpose is like adding cinnamon, or salt-- just a taste thing.
Does it have to be a certain proof of rum or does the usual 70-80 proof do the trick?
This is possibly the only episode of Laura in the Kitchen where she doesn't say it is simple or easy.

It's the same concept as adding wine to cooking. Alcohol burns off but it adds flavor. Rum is used in a lot of desserts because of the flavoring. This is also why you can buy imitation rum flavor and skip using the real thing.
