    Just made these 🙂 they're in the fridge rn! I used white chocolate chips.. And my mixture looked a bit more runnier than yours but still looked great.

    The thing about salmonella is it comes from the yolk of the egg (most of the time) so that's why putting the yolk and chocolate mixture back on the stove is important because when it thickens a bit that means the yolk has cooked. Egg whites are okay, they're not likely to give you salmonella, but it is important to use pasteurized eggs or eggs that are good quality.

    Thank you Thank you Thank you!!! I have attempted to make white chocolate mousse for a pie five times! (Using 3 separate recipes ) And each time, when I added the chocolate mixture to the whipped cream it would turn into a sad, wet, clumpy mess. I had all but given up til I saw your video. You said" Even if the chocolate seizes a little keep going. It's all going to mix together beautifully. " And it did and is super delicious! Put in a shortbread crust and topped with fresh strawberries, blueberries, and blackberries (I'm not a raspberry fan) and this pie took the cake! :)
