Vegetable Tikka Masala | One Pot Chef

This shortcut Vegetable Tikka Masala is great for throwing together at the last minute when you need to cater for an unexpected Vegetarian or Vegan guest! 1/2 Cup of Tikka Masala Curry Paste
400g Can of Diced Tomatoes
1 Cup of Water
1 Small Cauliflower (trimmed and broken into florets)
700g of Pumpkin (skin removed, cut into chunks)
270g Can of Coconut Milk
Salt and Pepper

Preparation Time: About 10 minutes
Cooking Time: About 20 minutes approx.

    those jarred curry pastes are fantastic. I get one from Coles and it's GLORIOUS. Cheaper than buying the individual ingredients that cost a gazillion dollars just to make the same thing. Keeps others in a job too,

    I made this last night based on this video. I had the tomatoes and coconut milk, but did not have the paste in the jar. Instead, I bloomed in hot oil a dab of jarred minced garlic, a squeeze of ginger from a tube, a couple of tablespoons of curry powder and a pinch of red pepper flakes. I made it with potatoes, chickpeas, summer squash and frozen peas. Oh, so good and a neighbor commented on the aroma that wafted over to his place. Thanks for the inspiration.

    I'm going to add some white beans to mine and I have a delicata squash which is quite sweet I don't have any pumpkins so I will use the squash.
