Tiramisu Cupcakes Recipe – Laura Vitale – Laura in the Kitchen Episode 342



Ingredients:
3 Tbsp of Instant Espresso Powder
1/3 cup of Vegetable Oil
2 Eggs
1 cup of Warm Water
1 ½ cups of All Purpose Flour
1 cup of Granulated Sugar
2 Tbsp of Cocoa Powder
¼ tsp of Baking Soda
¼ tsp of Salt
1 tsp of Vanilla Extract
3 Tbsp of Milk

For the topping:
1 cup of Heavy Whipping Cream
2 Tbsp of Powder Sugar
Mini Chocolate Chips

    I gave this a try, and I figured I won't make them again. Like Laura said, the batter was really more of a liquid than a normal cake batter which made the cake super fluffy. The fluffiness was nice, but the taste wasn't that great. It didn't really have a strong taste. I'd prefer a chocolate cake over this or a cake that tastes more like coffee. I've made a mocha cake before that tastes much better than this.

    Why do you have to add so much Granulated Sugar I mean 1 cup shouldn't there be less sugar!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! (:

    The sponge part I liked but the topping lacks the mascarpone cheese. I would add mascarpone to the cream of try another recipe, may buttercream with mascarpone cheese.

    i made these .. and i was so happy i got to taste tiramisu.. i could never make tiramisu coz i couldnt find any sponge fingers here thats y the cupcake version helped me taste it 🙂 thanx…
