INGREDIENTS IN THIS DISH:
1kg of Tomatoes (chopped)
500g of Potatoes (peeled and chopped)
1 Brown Onion (chopped)
2 Cloves of Garlic (chopped)
3 Cups of Vegetable Stock (750ml)
2 Tablespoons of Tomato Paste
Olive Oil
Pepper
Handful of Fresh Basil Leaves.
Preparation Time: About 10 minutes
Cooking Time: About 25 minutes
SERVES 4 – 6
ALL MEASUREMENTS GIVEN ARE AUSTRALIAN STANDARD METRIC

Have you ever tried blending the ingredients at the beginning before cooking them? Because I don´t have slender blender and for normal blender ingrediences should not be hot.

Hey OPC, I made this soup last night for my Brazilian in laws and it went down a treat, My wifes Granny had 3 servings. definantly a recipe i'll be using again, BETTER THAN HEINZ!!!

Made this for my wife. She loved it. I mixed it up a little and fried off some bacon to start, removed, then sweated the onions & garlic in the same pot, added chili, Italian herbs & paprika. Put everything in except a 1/4 of the bacon which we used for garnish! Devine!!!!!! Thanks OPC!!

If I may… I'd be inclined to add the goat cheese as a garnish to the top of your bowl of soup. A lot of mild cheese would disappear into a soup like that before you'd ever really taste it. OR add a whole pound! LOL! Nothing wrong with that either!
