Mirin is a sweet rice wine vinegar with a distinctive flavor. If you can find it, a splash of sweet sherry would be the closest substitute ๐Ÿ˜‰

Throw some of the marinade back into the pan, reduce it down well and you get the shiny dark teriyaki glaze. More mirin helps, also use tonnes of brown sugar.
250g mirin, 250g soy sauce, 10g garlic, 10g ginger, 10g sesame oil, 100g brown sugar is a good mix.

YouTube changed the subscription box recently. You need to select "Everything" from the drop-down box in the top right hand corner of the subscription feed on the front page. This resets everyday (for some reason) so you need to make sure it's not set to "Highlights" every time you come onto YouTube.

Either that, or follow me on FB, Twitter or G+ (links on my channel page) ๐Ÿ˜‰
