    In spite o the snooty wine, though, they look mighty damn good! I haven't had steamed clams like this for ages, and I guarantee I could suck down that whole batch and leave not a trace for anyone else. I'm mean that way…

    Lookin' good Larry! Like you mentioned, I used to think I didn't care for clams other than fried, but one day I was doing mussels in this fashion and threw in a half dozen cherrystones (or little necks, I forget) and was glad I did! Now when I crave mussels and clams are in the case, I always get some of each…now Sir, my broth isn't as spicy as yours (though I do use red pepper flakes) but a good piece of toasted/grilled garlic bread is a a necessity for sopping up the broth, yum! I'm also told these mollusks (and other bivalves) are nutritionally significant sources of vitamins and minerals…say zinc and iron…umm, which I'm also told helps galvanize your parts…>ahem<

    As for the wine my esteemed client, though I detect a hint of sarcastic oenophilia coming through from your name dropping recommendations (you didn't mention Two Buck Chuck:), I think I'll stick with a an un-oaked Chardonnay or the Pinot Grigio I usually have in the fridge…not putting down screwtops altogether – some quite decent wines use them now-a-days because it's cheaper than cork. However I prefer to to use the wine I'm drinking in the dish I cook (BTW, a mouthful is ~1/3 cup 😉 … umm… I don't think you're a wine snob simply because you didn't mention the vintages ;D
