Spinach and Feta Mini Frittatas | One Pot Chef



Spinach and Feta Mini Frittatas are a quick, simple and delicious treat that’s perfect for serving for a weekend breakfast or brunch with friends. Spinach and Sun-dried Tomatoes are combined with feta cheese and eggs, then baked until golden. There’s virtually no prep work and the results are senational – Try it today 🙂

Ingredients:

250g Box of Frozen Chopped Spinach (thawed)
100g of Sun-dried Tomatoes (chopped)
1 Teaspoon of Minced Garlic
300g of Feta Cheese (crumbled)
1/4 Cup of Self Raising Flour
10 Eggs
Olive Oil
Salt and Pepper

Preparation Time: About 10 minutes
Cooking Time: About 20 minutes

    these would be awesome for a body builder's brunch! the high protein content (eggs & cheese) with the iron, manganese and vitamins B-12, B-6, C, and K (veggies) and a little bit of fat (butter & cheese).

    I'm gonna whip these up with my big "butch" whisk, lol, for a post workout snack with my gym buddies.

    These look amazing! I'm trying to avoid white flour, so I've modified my recipe to just 1 tablespoon of flour, 1 teaspoon of baking powder (even with the self-rising four), and 2 tablespoons of dill pickle juice. WOW! They are amazing! The rise from the dill vinegar with just that little bit of flour and baking powder makes these so light and fluffy, and the subtle added flavor from the dill pickle juice just adds an extra kick of flavor! They are a hit with my kids. I'm trying your semi-sundried tomatoes next time! Thank you for this recipe.
