I used this recipe last night and it turned out perfect! I was despairing because the icing recipes I kept finding required other ingredients that I don't have and can't run to the store to pick up…but I already had all I needed for this recipe. It was ridiculously easy to make even using a hand mixer. I also just used a ziplock bag with the very tip snipped off to pipe the icing, since I don't own any piping bags… not as much precision, but still works! I live in the deep South and it's quite humid, but the icing set fairly well. It's still a little soft the next morning (as in, if you press down on it it'll squash) but it looks great. Thanks Laura!

When I was looking at a video to make Caeser salad, the chef (Fabio Viviani) said that the outside of the egg is what has the salmonella and other bacteria, the inside is completely fine and safe.  So one could wash the outside of the egg before cracking if they fear any bacteria and it'll be safe for consumption. He coddled the eggs in the video before putting the eggs in the dressing but I'm not sure if coddled eggs would have the right texture for royal icing.
