Pulled Chicken Mini Tacos | One Pot Chef



My Pulled Chicken Mini Tacos are quick to make, bursting with flavour and perfect for serving as party food, as part of a snack platter or for good old fashioned Taco Tuesday! Tender Pulled Chicken, cooked in tomato, honey and smoked paprika is served on soft or hard taco shells with your choice of toppings. So delicious, you’ll want to make these all the time – Try it today 🙂

Ingredients:

1kg of Chicken Thigh Fillets
1 Tablespoon of Tomato Paste
2 Tablespoons of Honey
1 Tablespoons of Smoked Paprika
1 Clove of Garlic (finely chopped or minced)
Salt
1 1/2 Cups of Water
Taco Shells (I used soft and hard “stand and stuff” mini taco shells)
Toppings of your choice (I used guacamole, sour cream, tomato and coriander)

Preparation Time: About 10 minutes
Cooking Time: About 50 minutes

    I picked this for my Saturday Night Special dinner this weekend! 🙂 I am going to try to do beef and chicken though in the same pot by getting some chicken breast and steaks as well. I will cut the steaks into strips after it is cooked. I will also have to end up using two pots after that since I will have to divide the sauce so I can have one for chicken and one for the steaks after I get them pulled/sliced up. 😛 That's okay though. I have plenty of pots. 😀

    The recipe is so quick and easy!
    The chicken, I used think sliced breast cutlets, came out so amazingly tender.

    I love BBQ smoked meats, however I realized that I don't like smoked paprika, as I don't care for smoked chipotle either.
    I would love to try again, as it was really a fast meal to get together.
    * Any ideas on what to replace for smoked paprika?
    Does regular paprika even have a flavor?

    Those boat-like soft shells must be Australian. Never saw soft shells like that in the years I lived in Texas and ate at Mexican tacorias. The soft shells were just round flour tortillas. Great recipe though I'm going to have to try.

    The thing about those hard shell tacos, is the first bite I take, it breaks and I shove the whole thing my mouth as it's breaking. But good video, thumbs up

    as a mexican, those are real size tacos Haha, and with the hard tortilla looks more like a tostada. Anyway, looks so yummy.
