Now I am going to make this tonight but with a chicken enchilada twist. What I was wondering is do you oil the foil beneath the pies or pam it at all?

I do something similar without the sauce. I grind up a roast after it is cooked and use pie crust to make the pockets. Started this about 35 years ago. Bought and cooked a roast and it was tough as shoe leather. Don was laid off at the time so didn't want to waste it. Always thought I invented them but found out they are called Pasties from Wales. Yours look delicious might make them a new tradition at Christmas.

Larry, we could have a stuffing contest. Let's see if you could stuff the filling in those Hot Pockets faster than I can stuff the finished ones into my mouth. Wow! They sure look tasty! I'd rather have one of those than any menu item from a fancy French restaurant. Nice going!
