    The best recipes call for the basic and good quality ingredients and simple seasoning. This is one of those fine examples!! I like caramelized onions on my eggs and pepper sandwich to add sweetness. :)

    I made this for dinner today! with little twists tough, garlic instead of powder onion & gouda instead of Parmesan with no Mozz and it was umammmmyyyy! Thanks Laura, you are a genius :*

    I am not Italian, so I get away with murder on these recipes, but I absolutely ADORE tomato sauces on these sandwiches. I will take leftover sauce and use it as a condiment on this sandwich, and I swear it is golden. Anything from a simple marinara to a hearty pork/beef/sausage sauce will work, but the simple marinara's really work best. I think it is the tomato acid with the sweet colored (I actually love to use yellow ones) peppers and the rich eggs over the buttered bread (I like to use french bread) just plain works. Call me crazy, but I also love to use fresh basil with the red sauce. Then again, I like to use fresh basil with anything.

    Ms. Laura why you keep saying MY EGGS, when you know that those are not your eggs those are chicken eggs.  A chicken lays eggs the chefs do not.

    Laura, my mother and father in law lived in long island. Every Sunday, their neighbor in back of them would make peppers and egg sandwiches which my father in law would enjoy. The neighbors were know as Noni and Norno. Thanks. Neil

    I have try this. .. but substitute pepper with capcicum add and add some red onion… and on top of it i put cheddar… That's all i have during that time.. lovely!
