Ingredients:
1kg of Beef Mince (Ground Beef)
2 Small Brown Onions (peeled and sliced)
3 Small Carrots (peeled and sliced)
1 Banana (mashed)
Vegetable Oil
1 Tablespoon of Mild Curry Powder
2 Teaspoons of Crushed Ginger
1 Small Red Chilli (optional)
400g Can of Diced Tomatoes
400g Can of Chickpeas (drained and rinsed)
Salt and Pepper
Serve with rice, noodles, mixed vegetables or by itself!
Preparation Time: About 10 minutes
Cooking Time: About 30 minutes

A handy and nutritious tip to bear in mind is that most curries and pasta sauces work just as well with potatoes as they do with rice or pasta. Potatoes are richer in vitamins than rice or pasta.
