I made these today and they was a HIT! We dont usually like Apple pie, but I had some Apples leftover and thought of trying these. I used the pie crust recipe from Joy of baking, because it was in grams, but it is very simillar to yours. And it was so flaky and delicious with the cinnamon apples.

I don't do the "everything has to be cold ' thing. My pie crusts come out so flaky and amazing every time, and no egg yolk. I also don't put disks of it in the fridge. I mix it, pat it out, fit in the pie pan, fill, egg wash, and bake….fast , easy and very flaky and tender every time.

Do I need to change the quantity of the sugar if I use granny smith apples? Also, should I soften the apples before putting them in the pie and baking them, since tart apples take longer to soften? Thanks! Love your recipes!

So I am making these for a New Years Eve dinner party tonight and am just hoping the apples are done enough. Has anyone made these yet? Do the apples come out yummy? Is it me or does 20 mins not seem long enough? If anyone reads this today, please advise! Laura, you're super cute btw. I will be looking over your other recipes. This pie crust looks ah-MAZING! Cannot wait to try!
