Mexican Meatballs with Salsa Salad is a delicious and healthy main meal. Succulent chicken breast mince is combined with breadcrumbs, herbs and spices to form the meatballs. Oven baked until golden and served with a light salsa salad, this dish is easy to prepare and will be enjoyed by the whole family – give it a go!

INGREDIENTS IN THIS DISH:

1kg of Chicken Breast Mince
1 Cup of Fresh Bread Crumbs
1 Cup of Freshly Chopped Coriander (Cilantro)
1 Small Brown Onion (grated)
35g Packet of Taco Seasoning Mix
Salt and Pepper
400g Can of Corn Kernels (drained)
2 Tomatoes (deseeded and diced)
1 Avocado (diced)
2 Tablespoons of Lime Juice
Corn Chips (to serve)

Preparation Time: About 15 minutes
Cooking Time: About 20 minutes

SERVES 4

ALL MEASUREMENTS GIVEN ARE AUSTRALIAN STANDARD METRIC

    What would you recommend substituting for the corn? I really don't like sweetcorn, I like the mini corn cobs though could I chop a few of those up instead?… love your videos

    I ate this yesterday, but i used beef instead of chicken, and it was f*cking delicious… It was the tastiest salad and meatballs i've ever tasted!!! and i used Cheese flavoured Nacho chips 🙂

    That looks SO freakin' good. I've never heard of using taco seasoning in meatballs, but that sounds amazing! In fact, I'll bet that whole chicken meatball mixture would make a great meatloaf. I wonder if anyone's ever tried making a chicken meatloaf, heh. Sounds good to me 🙂
