    Hi Kevin, could I use coconut sugar/agave nectar instead of a sweetener like stevia or regular sugar?

    Thanks! This is an awesome recipe! Question: I'm not really fond of carrots in my muffins, will it affect the moisture level if I leave them out? Or can you recommend a fruit that is low GI?     Thank you so much for this recipe Kevin! My mom (a retired nurse) takes care of my uncle who has diabetes and is a stage 4 colon cancer survivor (10 yrs now!). I have been making big batches of these to take to their house every week now. I also keep some for myself and my boyfriend as a yummy breakfast or snack.:)
    Thank you again for this recipe! My family enjoys it so much! Also, sometimes I add small apple pieces to the recipe as well. Yum!

    I sooo want to make these!!
    I do have baking powder, but no baking soda.. is that a problem? Could I just use some more baking powder?

    Hi Kevin! I bought your book and it's great!! You're such an inspiration and all of your recipes are newbie-friendly (if that makes sense hahah) but what i mean to say is, it's easy to follow for a person who doesn't cook all the time. I have a question though, is it true that if you use protein powder everyday, it will mess up with your kidneys?
