Light & Tangy Pasta Salad | One Pot Chef



This Light & Tangy Pasta Salad is so simply to throw together, and can be served as either a side dish or a main meal. Cooked pasta is cooled and combined with tomato, celery, spring onions, shredded chicken and a light, tangy dressing. Easy to make and perfect for feeding a crowd, this recipe will become a quick favourite at your place – give it a go!

INGREDIENT LIST:
===============

250g of Pasta (cooked following packet directions)
250g of Cherry Tomatoes
3 Sticks of Celery (diced)
3 Spring Onions (thinly sliced)
1/2 Cup of Grated Cheddar Cheese
1/3 Cup of Olive Oil
Juice of 1 Lemon (about 1/4 Cup)
Salt and Pepper
OPTIONAL: 1/2 Barbecued Chicken (meat stripped and shredded)

Preparation Time: About 20 minutes
Cooking Time: About 10 minutes

SERVES 4

All measurements and temperatures are in Australian Metric.

    I tried something similar and added pickled nopalitos (cactus) in it. Can be hard to find, but they have these La Costena jars. Healthy and delicious!

    With chicken could be a great main dish…..w/o chicken a nice light-ish side to a heavy main entrée. Looks amazing!

    best rule of thumb i go by – always use one bowl bigger than you think is necessary for mixing! pretty sure we have the same set of mixing bowls Mr. Potchefshow so use the blue one next time! Thanks for the video 🙂

    Is that to healthy for you?  You could buy that fat infused, High Fructose corn syrup loaded, Salt and Preservative packed  bottled  salad dressing from the grocery store and cover up all the other flavors so all you taste is the dressing.  Yummy!
