    Ah the Scotch Bonnet! A truly deadly Chili to first timers in some regard, with a 100,000 to 350,000 thousand measure on the Scoville scale. That's pretty damn hot. But remember that whilst you feel pain, you also get a contrasting pleasure! Similar to that of a strong [fresh] coffee buzz. Of course you can do it with stronger chillies if you're used it; the point is it's meant to be HOT! But forget about using either the Scorpion or Ghost chili..

    Great recipe. Can't wait to try it………About washing the chicken…… there is a lot of recent research that advises NOT to wash chicken as it is likely to end up with more bacteria on it than before you washed it.

    Yesss you get a passing grade from a caribbean chic! we always marinate chicken in spices, lime and seasonings before stewing, roasting, currying etc….it looks very delicious.

    Nice recipe! πŸ™‚
    When dealing with those type of chilies I use those thin rubber gloves. Easier to be able to grab chilies, cut them up, deal with it, bung the knife in the sink and toss the gloves in the bun. Minimal risk of burning your eyes out.
