I bet the coconut adds a good amount of moisture to the bread. That helps to keep it nice and moist but it surely won't last that long if it tastes that good. Looks delicious!

Can I add half regular sugar and half brown sugar for this?

    Tip from IMHOAO:
Take bananas turning brown on the outside and peel them. Then place the banana, without the peel, itself into a Ziploc freezer bag, I place about 3 -4 medium size bananas per bag. These peeled bananas will not turn brown from this point on.  If left in the peel, they turn brown.
Sometimes I just go ahead a mash them all up, then put them into the freezer bag and now when ready to use like in a bread recipe you just need to defrost on the counter or in the microwave.

Hi Laura, what do you use for eggs for baking if you do not eat eggs? Does the substitute come up well?

Faith diamond, before you click in the video to watch in every recipe she has, go down below and that's where you find the ingredients and the process. Most people have problems with this. It's because they're not scrolling all the way down. They just look at the video right away. Probably too excited! I am on the process of putting all my ingredients right now! Mmmm…can't wait!:-)

Thanks for this recipe!! I didn't have coconut but I did add a teaspoon of cinnamon and my family loves it! On a side note, the written recipe on your website doesn't say when to add the bananas. Not a huge deal though since I just assumed it was included with the wet ingredients

    Hi Laura,

On your website, the written recipe for this has no banana in it! Could you please make that change?

    Thanks! 🙂

it very moist. It such a delight and very easy to make

I haven't tried it personally, but I have seen in recipes by other channels (e.g. the carrot cake recipe on the Show Me The Curry channel) that eggs can be substituted by flaxseed powder mixed with a little bit of water. Please look up that recipe to see how it's done. They have a lot of eggless cake recipes as well. I hope it helps. 🙂
