Pok pok sounds like something that chicken would say when you're trying to rip its wings off.
The wings look yummy, and that glaze is killer! I'm still boycotting wings, though. I teatotally refuse to pay 5 bucks a pound for the part they used to throw out, just because they're now "the in thing." I remember when they gave them away for 16 cents a pound. Humbug! LOL

While Pok Pok sounds like some legal mumbo-jumbo, my staff tells me it loosely translates as "Good Good" and I won't argue with that!

Hi. I own Pok Pok's new cook book, and I have eaten at Pok Pok many times, and while these wings you created sound great, your recipe is quite different from the Pok Pok recipe (they are known there as Ike's Vietnamese Fish Sauce Wings). There is no ketchup or brown sugar anywhere in this recipe…and the rice flour and tempura batter are pretty important, because it helps create that incredible texture. I don't want to put down your recipe in any way, and I understand that it is difficult to replicate a restaurant dish at home, but perhaps it is a little misleading to call them "Pok Pok" Chicken Wings. Maybe just "Fish Sauce Chicken Wings"? Just a suggestion. I wish you the best.

Sorry, Larry I can't comment underneath my original comment for some reason. It was the bread the sandwich was on. It was round like a tortilla, but thicker like a naan, but didn't taste like either! Maybe no one has ever heard of Olgas, but I remember as it was such as odd name! It was very good! If you don't know what I am talking about, that is cool, lol. Your recipes are great!!!
