Really great take on Hot Cross Buns. They're one of those foods that doesn't really have a specific recipe or even a traditional recipe, any variation works!

Laura, you need to come over to the UK sharpish, especially my city London. I have always bought my hot cross buns from the bakery but I may bake my own this Easter cos you make it look so easy.

If you watch someone like Paul Hollywood, he will tell you that in fact cold water does work, it just makes the fermentation/rise slower and as a result, the flavour of the dough is much better. You can even let your dough rise in the fridge overnight.

Hi Laura, just made the hot cross buns for Easter. They were delicious. You have shared important tips regarding Yeast which is very key to the success of the recipe. I threw my first yeast mixture because the milk was too hot and yeast formed a lump. Then made sure the temp was 38C as per package instructions and everything was perfect. Thank you for sharing a beautiful recipe and great tips.

Dense dough is not only about the yeast but how you knead the dough as well

Traditionally you would arrange the buns so that they meet when they rise and pull them apart after baking and the glaze is made up of flour and water and piped on before they bake, go look up the great British bakeoff masterclass hot cross buns 🙂
