I'm seeing a couple of fried eggs, over easy, sunny side up, on the hash browns, substitute for toast. It would be awesome.

I made this yesterday and even after adding a fair amount of salt I thought the taste was bland. I think rinsing the starch out hurts the overall flavor. It just didn't taste like potato anymore. Will try again without the rinsing. I think the majority of the potato flavor is in the starch that is going down the drain with the rinse water. I'm sure the egg and flour will be enough to get the crispy texture.

I use one egg and 3-4 tablespoons of flour for 5-6 potatoes, without the onion and i dip them in sugar and eat them just like this.
