    Removing excess liquid from the ricotta is a great idea for making lasagna too.

    Laura!!! you don't like cold Ricotta? Try buying fresh hot Italian Rolls or Bread, get home as fast as you can, cut a Roll open, drizzle extra Virgin Olive Oil on the Roll then spoon a few dollops of Ricotta Cheese, sprinkle some Locatelli or Parmisan Cheese and some black pepper, eat! It's unreal!

    Buy yourself a waffle cone maker. That is what I use to make Cannoli, super easy and super fast. Most waffle cone makers even come with the shaping tool to wrap the Cannoli's with to shape them.

    I'd love to have someone that loves me deep enough to take some time during their day to make me Cannoli but that it's not happening. I SO wanna try Cannoli since 5 or so years ago— I'm definitely making my own! Thanks Laura!

    I don't mean to be horrible to her grandma but how can this count as a 'traditional' recipe if the shells are store bought? If it were truly traditional and homemade then buying store-bought pasta wouldn't come into it simply out of pride in your workmanship. It's like buying a jar of tomato sauce and pasta and claiming your spaghetti bolognese is a traditional recipe.
