Vegetable Soup is a fantastic winter warmer. It’s easy to prepare, quick to cook and cheap to make!!!

RECIPE FACT SHEET

INGREDIENTS IN THIS DISH:

2 Potatoes
2 Carrots
1 Parsnip
1 Swede (Small Turnip)
1 Celery Stalk
1 Small Onion
2 Litres (8 cups) of Stock
1 Tin of Diced Tomatoes
Olive Oil (Garlic Infused is best)

SERVES APPROX. 8 – 10

Preperation Time: 10 minutes
Cooking Time: 30 – 40 minutes

ALL MEASUREMENTS GIVEN ARE AUSTRALIAN STANDARD METRIC
(Look up Google for a converstion chart if using Imperial)

    I cook split beans, lentils in a pressure cooker for 15 minutes in a litre of water, then add  them to the vegetable pot. after one hour I add some pasta beads for another 10 minutes . in the end I add some grated parmesan in the plate.

    I wish I could get my hands on enough organic veggies (at one time) to make this soup.  It sounds wonderful.  But, where I live, my choices are limited.  And, I eat only organic.  But, thanks for the videos.  I do enjoy them.

    in the Netherlands we often add little balls of minced beef (size of little marbles) to vegetable or tomato soup. I've never seen it in recipes from countries other than the Netherlands or Belgium. You should try it's very nice!

Just google for it and you are going to find  bellyfattack.com  There you can get a good free video presentation by a well accredited medical doctor revealing the best way to lose excess weight. It helped Melody to lose her abdominal fat. Why not give  it a shot. It may help you out also…

    Yes, you can do this in a slow cooker, and you can skip the soaking step. I recommend adding a little bit more liquid, as the pulses will soak some up while cooking ;)

    could this be done in a slow cooker ? If so what would you do differently, I am guessing the pulses would not need soaking overnight.

    No, it's exactly the same whether you use home made stock or store-bought ;)

    i see that you are using chicken stock powder. is there any different if you make your own stock instead of using powder?

    If you're going to buy olive oil in a glass container, keep it somewhere in a dark place.

    Alternatively, you could just buy it in a can. Fillipo Berrio, although very expensive, is the best brand.

    Try looking around youtube for some Polish ladies teaching how to do soup. They traditionally have soup as the first course so they make their soups super tasty, almost in a sense that it is an appetizer. (Eating that way everyday will also keep weight down since you're already half full by the time the 2nd course comes to the table).

    We like to add a little bit of sour cream to the soup. Once you got the soup going. take half a cup of the soup, and add a few tablespoons of sour cream and mix, then back in to the soup and stir.

    Makes it creamy
