Creamy Bacon and Mushroom Chicken | One Pot Chef



Creamy Bacon and Mushroom Chicken is an easy weeknight dinner dish that only requires a little chopping and stirring! Onion, garlic, bacon and chicken breast pieces are combined with mushrooms, zucchini, mustard and cream. Served over rice, pasta or with mixed vegetables, this delicious and flavoursome meal is simple to prepare and destined to become a new family favourite – Try it today 🙂

Ingredients:

500g of Chicken Breast Fillets (chopped into bite sized pieces)
1 Brown Onion (finely chopped)
2 Cloves of Minced Garlic (about 2 teaspoons)
2 Slices of Middle Rasher Bacon (chopped)
2 Zucchini (chopped)
200g of Button Mushrooms (finely chopped)
1 Tablespoon of Mild Dijon Mustard
1 1/2 Cups of Cream (whipping cream or pouring cream will be fine)
Pasta or Rice (to serve)
Olive Oil
Salt and Pepper

Preparation Time: About 15 minutes
Cooking Time: About 35 minutes

    Mushroom chicken and bacon? This will never work…But seriously Canadian bacon is usually not that fatty infact quite the opposite. Would you have used a fatback bacon??

    I LOVE your cooking!!! I am a huge fan of yours! Dijon mustard is a great touch! I have one of your books and plan for another. Alas, I have recently been diagnosed with high cholesterol. Adjustments I'd prob need to make: NO BACON from any country. 🙁 NO CREAM. 🙁 For the sauce I'd coat chicken pieces in flour or cornstarch in a baggie, then cook separately until almost done (to prevent me from overcooking them). I think the sauce will thicken from the coated chicken when i add it to my cooked veggies (maybe add diced carrots or sweet potatoes) and 2% low-fat milk. I need to loose weight to lower my bad cholesterol so, I guess I'd have to skip the carbs and have no noodles or rice. Ugh! This dish might be great with a hearty textured fish? Thanks for the great inspiration! It helps me so much.
